How to burn bechamal sauce.

Now this will take a while. So don’t just press ‘like’ and go away. I put a lot into this post so if you look at it say something.

The old man went for a walk in the wind. He passed an opportunity shop. He stopped and went back. There was a coat. Not a heavy woolen coat. This was a heavy wind coat. It was winter. He paid the man, he took the coat and went home.

Tomorrow he would make a meal for his daughter. Something he had not made before. He hadn’t been able to make it for her before. It wasn’t spaghetti with meat sauce. That was just too much for always. He walked passed another shop and the sounds and the smells took him back to before. Before what? Don’t ask. Before.

He would make Pastitsio. No it isn’t lasagna. That is Italian. It’s the same but different. Very similar but different enough. He went on line to get a recipe. Make it if you wish. I don’t care one way or the other.

He only had one saucepan so it will take a while. Maybe a CD on the deck. He went to his CDs. He didn’t think but it was automatic. He tossed up. Nana Maskouri or Demis Roussos.

He started on the sauce. Here is the recipe.

Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Transfer to a 12 cup-capacity ovenproof dish.  

He only has one saucepan so this will take a while. Demis is singing. You can listen if you wish. For ever and ever you will be the one I love.  That’s what the old man is listening to.

He puts the pasta on to boil.  It takes ten minutes. He puts it aside and starts on the meat sauce.

 Meanwhile, heat oil in a frying pan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 6 to 8 minutes or until browned. 

Oops. Missed that track. Little brother rang. Replay. Press stop. This takes a bit of time. Missed that track. Go back.

Oh man! Oh lovely lady of arcadia.

But whatever the past I must make dinner for the daughter tomorrow. Back to the recipe.

Make the bechamel sauce.

Make bechamel sauce Melt butter in a saucepan over medium heat. Add flour. Cook, stirring, for 1 minute or until bubbling. Remove from heat. Gradually stir in milk until smooth and combined. Return to heat. Cook, stirring, for 5 to 6 minutes or until sauce boils and thickens. Remove from heat. Stir in cheese. Stand for 2 minutes. Whisk in eggs to combine.

But don’t listen to the songs. So I put on Nana Mauoskouri.  The white rose of Athens. I loved this song. And the next song.

And so on and I replayed it and the bechemal sauce caught on the bottom and burnt. But I put it in the oven. And I forgot it but it is OK.

But in the end it all comes down to this……..,

  1. It seems your heart was on the right track. Very tender post, I’d say, even though the bechamal sauce burned. Getting lost and found in music is a great way to go. 😊🎶

  2. I’ve scorched a few things a time or two whilst getting lost on the jukebox of memories, have never tried béchamel sauce….will add it to my to do list. Alas, just finished brownies (not burnt) and eggplant parmesan that will bake later (pray I don’t burn that) along with some crusty garlic bread to accompany. It’s nice to be able to cook, been so busy at work lately (hence my lack of visiting till now)…but funny, as I write this, a commercial for Outback steakhouse comes on….I’m sure your food down there is much better and unique than the Americanized version ❤ peace and love Paolsoren

  3. Obviously you were not meant to be a cook, you seem to be easily distracted from the task at hand.
    When I’m cooking there is nothing around to distract me, except my dog Coco, hoping for me to drop something his way. The War Office appears occasionally to ask if there is anything she can do, and I tell her politely to bugger off.
    That’s the way I like it! 😀
    As a consequence, I’ve never burnt béchamel sauce
